In 1919 Roger Forchy obtained the patent of pastry chef, this young man, from Yvetot, became a pastry chef employee in Rouen. Ten years later, with his wife Gilberte, also from the “Pays de Caux”, he decided to open his restaurant in Yvetot. That same year, Claude, their son, was born. Roger designs and develops new pastries to make them known outside Yvetot, determined to develop this new activity, he also creates a cake in the name of the patron saint of the city “Le Saint-Luke” and will keep secret this recipe that still has its fame.
